The Okura’s culinary team is working closely with Miyasaki Brewing’s experts to create a perfect pairing. Yamazato Japanese Fine Dining is collaborating with the Miyasaka Brewing Company, Ltd. to present the “Masumi Sake Paring” Menu at Yamazato from June 21 to July 23, 2017.

Masumi sake was founded in 1662 near Lake Suwa at the center of the Japan Alps in Nagano Prefecture. Masumi Sake is brewed in the exotic place known as Shinshu Suwa where is surrounded by the Yatsugatake “Eight Peaks” Range, that includes Mount Tateshina and the Kirigamine Highlands. The region has crystal clean air and pure water whets its long winter period provides the purest ingredients for the finest quality of sake. Due to Masumi’s quality it received a gold medal, and has achieved recognition among the breweries in Japan.

During the promotion period from June 21 to July 23, variety of sake have been selected including Karakuchi Kiippon Sake (One of the central pillars of the Masumi brand, it is dry, fresh and easy to drink); Nanago Sake (with a mild fragrance and firm acidity, have full flavor with a “clean finish” allowing you to drink all night without tiring); Sanka Sake (with a fresh, natural flavor that builds from cup to cup); Miyasaka Miyama (with a fine acidity and mild aroma this sake is perfect with food).

The Kaiseki Masumi Set-Lunch is priced at MOP 580 per person or at MOP 700 with Sake pairing. This set it comes with appetizer Wasabi marinated in Masumi Sake lees, Tofu skin with Miso, fig with Kouji rice malt, Sashimi, Grilled salmon with Shinshu Miso, Deep fried white shrimp with sweet corn, Grilled rice Onigiri served with Dashi, and Dessert (ice cream made with Masumi Sake lees).

The Kaiseki Masumi Set-Dinner is priced at MOP 1,380 per person or at MOP 1,600 with Sake pairing. This set it comes with appetizer Wasabi marinated in Masumi Sake lees, Tofu skin with Miso, fig with Kouji rice malt, Soup of Kagoshima beef with seasonal vegetables, Sashimi, Grilled cod with Shinshu Miso, Sobagaki with duck stock, Deep fried white shrimp with sweet corn, Fruit tomato from Shikoku, Grilled rice Onigiri served with Dashi, and Dessert (ice cream made with Masumi Sake lees and seasonal fruits).

“Masumi sake is not a large sake brewery in Japan but it has a full history of innovation and meeting challenges. My grandfather and father have faced major challenges in sake quality and a rapidly changing market in Tokyo and other parts of Japan. With such challenges I decided to explore the opportunities for sake in the international markets, including Hong Kong and Macau. Last year we completed a major milestone that included implementing a refrigerated warehouse for quality control, full training courses to our sales team, and a focus to be the most reliable supplier in the market,” says President of Miyasak Brewing Company, Mr. Naotaka Miyasaka.
